Jack is most renowned for The Dead Rabbit in Lower Manhattan, which he opened and manageswith Sean. The bar has won eight Spirited Awards from Tales of the Cocktail, including World’sBest Bar, World’s Best Cocktail Menu (twice) and International Bartender of the Year (JackMcGarry). Dead Rabbit was also voted World’s Best Bar in the World’s 50 Best Bar Awards inLondon, 2016. Named after a 19thcentury street gang, The Dead Rabbit channels the era in itstaproom, cocktail parlor and Occasional Room spanning three floors. Jack tested thousands ofrecipes from scores of historic cocktail tomes, making 50 to 70 versions of each to account formodern tastes and oversee menu development.

Immediately prior to joining The Dead Rabbit, Jack tended bar at the acclaimed Milk & HoneyLondon, where he learned to take in the entire barroom, rather than focus solely on makingdrinks. It followed his work at The Merchant Hotel, which was declared World’s Best CocktailBar in 2010 at Tales of the Cocktail. He knew of Sean’s outstanding work of making his ownliqueurs and bitters, and using fresh juices and bespoke ice. It was here he immersed himself inthe study and practice of preparing classic drinks.

Previously, Jack did a stint at Apartment, after slinging drinks atNorthern Whig, at which Sean,his future mentor, was Bar Manager. At age 17, Jack tended bar at Tatu, an emerging presence inBelfast’s cocktail scene. His first bartending gig was at the Balmoral at the age of 16 for a brieftime. Jack bussed tables at Café Vaudeville, a stylish bar, and it was here that he fell under thespell of the art of the cocktail, with its focused rituals and meticulousness. Jack embarked on hisbartending career at the age of 15 as a barback in a Belfast joint called The Hunting Lodge.
