Kevin Diedrich brings a deep appreciation for and understanding of the Bay Area cocktail culture to Pacific Cocktail Haven (P.C.H), a concept that exudes hospitality and offers inspirational cocktails reflective of Kevin’s illustrious career behind the bar. The menu’s classic approachable style is a perfect reflection of Diedrich’s own, served up in the intimate setting of the new P.C.H space, on Sutter Street, where Union Square meets the Nob Hill neighborhood in San Francisco.
Raised in Northern Virginia, Diedrich first began his hospitality career in 2002 as bartender at the Ritz-Carlton in Washington, D.C. before assuming the role as lead bartender for the hotel group’s San Francisco property in 2005. Inspired by the Bay Area’s cocktail community, Diedrich later went on to work at local restaurants and bars including Michael Mina’s Clock Bar, as well as CASK and Bourbon & Branch, where he spent the next two and a half years honing his craft behind the bar.
In 2008, Diedrich returned to Washington D.C. to join the opening team of Michael Mina’s Bourbon Steak as lead bartender, helping create and execute the restaurant’s bar program. Later that same year, Diedrich relocated to New York City spending time behind the bars of PDT and Clover Club, both renowned for their classically inspired yet innovative cocktails. Diedrich also completed the Beverage Alcohol Resource Program in 2009, an extensive week-long training course led by some of the most iconic personalities in the industry including Dale Degroff, Andy Seymour, Steve Olson, Paul Pacult, Doug Frost and David Wondrich.
Diedrich return to the Bay Area in 2010 to open The Burritt Room, and was named one of San Francisco Chronicle’s “Bar Stars” in 2011. Later that same year, he joined the Kimpton Hotels & Restaurants team, working as bar manager for Jasper’s Corner Tap & Kitchen. In this role, he was responsible for the creation of the cocktail and beer programs, which included 18 beers on tap and cocktails on tap. In 2016, Kevin partnered up with local restaurateurs Andy Chun & Jan Wigniton to open one of San Francisco’s hottest cocktail bars, Pacific Cocktail Haven. PCH has already solidified itself with recognition in Esquire’s Best Bar’s in America, Timeout’s Cocktail Bar of the Year 2018, GGRA Saucy Award for Cocktail Bar of the Year 2019, Tales of the Cocktail Spirited Awards “Best American Cocktail Bar 2020” and more. Diedrich was honored as Thrillist’s 2016 bartender of the year and was nominated for “Best American Bartender” at Tales of the Cocktail for three consecutive years (2017, 2018, 2019,), the country’s most prestigious industry award. Most recently Kevin was awarded Bartender/Owner of the Year 2020 by Nightclub & Bar Show, Tales of the Cocktail “American Bartender of the Year 2020” and is most recently just opened his second bar Kona’s Street Market a cocktail bar inspired by Street Markets around the world. Named after his lovable dog Kona, the bar just was recognized by Esquire Magazine’s Top Bars in America 2021.
