@mherchuck1 | Mike serves as the Director of Operations for American Social Bar & Kitchen where he balances his vast experience in both restaurant operations and marketing.  He leads the development and implementation of standards, training and marketing programming.  As a high-volume bar and restaurant concept, AMSO is positioned as an emerging concept for aggressive growth with locations in Florida and beyond.

Before he joined the AMSO team, Mike spent 17 years rising through the ranks and roles of the Smokey Bones Bar & Fire Grill organization. Starting as a bartender in one of the original locations in 2001, he grew his skill set through serving as a corporate trainer for new restaurant openings. The path led him to constantly evolve his skill set for the brand serving in management roles behind the bar and in the kitchen. He was promoted to General Manager earning awards that included Most Improved Operation, Best Bar Operation and Lowest Team Member Turnover.

In 2011, Mike moved into the role of Corporate Bar & Late-Night manager handling the development and implementation of bar and beverage standards and promotions across all 66 Smokey Bones locations. The programming resulted in a 20% increase in beverage sales and 50% increase in late night bar sales. Mike was promoted again into the Beverage Director position where he focused on both marketing and operations with the responsibility of menu development, partnerships and elevated execution.

Mike was truly raised in the industry, hailing from Springfield, Massachusetts, where his family has owned a bar since he was five years old. He grew up cleaning floors, stocking beer and learning about the bar business. Mike worked his way through college as a server and bartender while attending the University of Central Florida and University of Massachusetts to earn his BS in Chemistry. Mike is a member of the United States Bartenders Guild – Miami Chapter, a Certified Cicerone, and studying to become a Certified Spirits Specialist.
